One can eat okay at such places, especially out in backwaters
such as Illinois, where it is said the Corrals are stocked with
decent food, but even out where my brother convinces me to go,
if you stay simple (not Asian, God forbid), you and your tastebuds
won't die.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Roasted Ratatouille
 Categories: Live!, Squash, Eggplant
      Yield: 2 Servings

      1 md Zucchini, halved lengthwise
           And cut crosswise into
           1/2-inch-thick pieces
      1    Red bell pepper, cut into
      1    Inch pieces
      1    Red onion, cut into 1-inch
           Pieces
      1 sm Eggplant (about 1 pound),
           Cut into 1-inch cubes
      2 tb Olive oil
    1/4 c  Golden raisins
  1 1/2 ts Freshly grated lemon zest
      2 ts Fresh lemon juice

  Preheat oven to 450 degrees and lightly grease a large shallow baking
  pan.

  In a large bowl toss vegetables with oil and salt and pepper to taste
  and arrange in one layer in pan. Roast vegetables, stirring
  occasionally, until tender and golden brown, about 20 min. Stir
  in raisins and roast 3 min more. In a bowl toss ratatouille with
  zest and juice.

  Yield: Serves 2 as side dish
