It's not even that. It's a local dig. What my mind's eye
sees is the honest fisherfolk up on the North Shore giving
a more or less good-natured sneer at the white lace curtained
Bostonians and calling pollock (pollack, say some) by this
name with the implication that the city folks were so sissy
and prissy that they thought the tasteless fish was as much
a challenge for their urban palates as hearty manly bluefish
was for hearty manly palates. By the way, it wasn't so long
ago that both bluefish and pollock were considered plebeian,
almost trash, fish. Perhaps pollock was at the very bottom
of the boat at some time.

I'm actually much more familiar with Cape Ann than I am with
Boston. And no doubt I've heard the term Boston bluefish before,
but not in Gloucester and certainly never in Boston, which was
my point.

I figure the only confusion is deliberately origined.
It's a Gloucester dig against Bostonians if anything
(I think I said this before). Scotch fillet, city
chicken, Cologne caviar - not all the spoof foods are
awful things, but the implication is that the Scots,
city folks, and Kolnischers either didn't know the
difference or were so impoverished that they had to
substitute ribeye (some say sirloin strip) for filet,
veal for chicken, or Blutwurst for caviar. Tastes do
change, don't they.

Soy and maple Scotch fillet
categories: Australian, beef, main
servings: 4

4 Coles Beef Scotch Fillet Steaks
2 sm cobs of corn, husks removed
12 cherry tomatoes
3 Tb Coles Brand Olive Oil, divided
100 g rocket
1/4 red onion, thinly sliced
2 ts balsamic vinegar
h - Marinade
1/4 c soy sauce
1/4 c maple syrup
1 Tb balsamic vinegar
2 ts fresh thyme, chopped
2 ts orange zest, finely grated
1 Tb Coles Brand Olive Oil

Preheat a barbecue or grill pan to a medium-high heat.

Whisk all ingredients for the marinade in a small bowl.
Place the steaks in the bowl and marinate while
preparing the salad.

Brush the corn and tomatoes with 2 Tb olive oil, season
with salt and pepper and place on the grill.

Cook the tomatoes 4 to 5 min or until their skins start
to blister, then remove from the grill.

Cook the corn 8 to 10 min or until golden brown on all
sides. Remove from the grill to cool. Once the corn is
cool enough to handle, use a large sharp knife to cut
the kernels from the cob and reserve.

Remove the steaks from the bowl and shake off any
excess marinade. Place the steaks onto the grill and
cook undisturbed for 2 min.

Turn the steaks clockwise a quarter turn and cook a
further 2 min (for a criss-cross pattern), then flip
and repeat on the other side for medium rare.

Remove the steaks from the grill and rest, lightly
covered with foil, for 4 min.

Toss the corn, tomatoes, rocket and onions in a
large mixing bowl with the balsamic vinegar and
remaining olive oil. Season to taste with salt
and pepper and divide the salad among 4 plates.

Slice each steak into thin strips and place onto
each plate along with the salad.

Drizzle any remaining juices over the steak and
serve immediately.
