Hi Ruth,

>>> CONTINUED FROM PREVIOUS MESSAGE <<

>> That's good ;) With this new kitchen even though we've been here for
>> just over a year, I feel like I'm still getting the kitchen in some
>> kind of order. The cabinet space is quite a bit 'less' than what I
>> had in Windsor so it was quite frustrating at first. Ron has put two
>> cupboards with butcherblock tops from Windsor that weren't really

>> had in Windsor over here. That is helping a lot. (g). I guess he got
>> tired of hearing me swear at the existing kitchen cupboards (G).

> You had a nice big kitchen in Windsor with some interesting storage
> spaces.

Yes, that big built-in cupboard was great :) So was the window enclosure that
Ron made out of the windowed back wall for all my blue Willow.. Right now that
blue willow-ware is stored in another smaller hutch in the kitchen, but Ron
wants to do the same kind of thing with the computer-room double window. I'm
not sure if I like the idea as the ceilings here are so much lower than in
Windsor :) We'll see..

> I know the fun of trying to fit things into a new kitchen tho;
> I've had to do it quite often. It's always a challenge trying to find
> just that right spot for each thing.

I was tempted to offer a door-prize to anyone who could re-organize my cupbards
in the best way at the picnic :) :)

>> That is something Mom always did.. she always served a big salad with
>> pasta dinners, or on holidays, she'd serve antipasto with a variety of
>> vegetables, and then a salad before the main meal.

> My mom rarely made a salad; Dad didn't like them but eventually started
> eating them. She never did learn to make a good salad. When we werre
> growing up, the only thing that went with a pasta dinner was Italian or
> French bread & dessert.

Mom was very aware of nutritional aspects of eating, so I'm not surprised at
how she served us dinners/lunches/breakfast, etc... AAMOF, one of things she
did before she retired was help to set up the WIC program.

>> This Mom's recipe for roasted peppers, we had this at most holiday
>> dinners with other antipasto items:

>> ===Roasted Peppers===
>> Preheat oven to 500F

> Looks good, and easy. We did about 3 half pint jars of peppers last year
> when we found them on sale.

It is easy - a good use for fresh peppers. I've canned them afterwards in the
past.

>> Yeah, it can be a challenge making dinner for her crew since two of
>> her boys also have similar allegies.

> You should be a pro at it by now tho. OTOH, I'd have a harder time
> figuring out what to do until I knew who could eat what.

Generally, nothing manufactured or processed .. but yes, it helps when you ask
people beforehand :)

> We knew a kid that was allergic to soy, and other legumes. He couldn't
> have peanut butter; our daughter Deborah felt quite sorry for him as she
> loved it.

I can understand that one :( I think peanut butter is one of those things my
son couldn't live without, he eats so much of it rather than meat most days.

>>> Yes, true. If not for my son hating chicken (and most meats
>>> generally) I'd probably keep a bit more of it cooked and ready (g).

>> > Hating meat or just wanting to eat vegetarian? I'd have a hard time
>> > giving up some cuts of meat, others would go without regrets. (G)

>> He generally just doesn't like anything with a lot of fat ... he'll
>> eat steak, but in small quantities. Chicken, he avoids all the time.
>> He's probably healthier than any of us Lol

> Chicken is usually leaner than beef. Does he eat any pork?

hehe.. well, the thing is, he'd rather eat no meat period. He like fish a
great deal, and he likes bean dishes as well. The perfect dinner for him I
think would be pasta e fagioli (grin). He will eat steak and pork in small
(and I mean very small) portions, but not without a look of disdain on his face
(g). On the other hand, when I make fillets of fish, I have to make a goodly
amount :)

Like I said, he's probably the healthiest of all of us.. he rarely gets
colds/flu when they are around.

Take care,
Janis
