I only do corn chips if I am making Frito Pie. And corn tortilla chips 
if I am at a Mexican restaurant and using them to dip up salsa - or 
scoop rice and beans.

I don't do a lot of potato chips of any stripe these days. But, for 
those times when I get to jonesing for a salty snack I keep a bag of J. 
Higgs (Sav-A-Lot's house brand) on hand. Never did understand the 
attraction of Lay's - given the price : taste ratio.

It's not a big deal - mostly curiosity on my part. Not many in the Great 
American Outback have even heard of Utz (or Herr, or Hartley) potato 
chips --- all from Pennsylvania. And, truth be told, I'd have to try 
some Utz again just to be sure that time and distance haven't caused my 
rememberey to gild the lily, as it were.

Something didn't sound right to me so I went and looked it up ....

Some things are apparent to me from this - raw for raw there is not a 
lot of difference (.5%) between carrots and sweet potatoes. And carrots 
lose sugar when cooked whilst sweet potatoes seemingly gain sugar - by a 
substantial percentage. And I (in my mind anyway) had made the common 
error of many in confusing yams and sweet potatoes - hence the cites for 
yams - which are almost devoid of sugar.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Karen's Sweet Potatoes
 Categories: Potatoes, Dairy
      Yield: 12 servings

      8 tb Butter
  1 1/2 c  White tables sugar
  1 1/2 c  Brown sugar
      4 lg Eggs
      1 c  Whipping cream
      6 c  Grated sweet potatoes

  Preheat oven to 350øF/175øC.

  Cream butter with sugars. Add eggs and beat until well
  blended. Blend in cream and sweet potatoes.

  Grease a 9" by 13" baking dish. Spread potato mixture into
  dish and bake for 1 hour. Check. Top should be nicely
  browned. Bake an additional 15 minutes, if necessary.
