MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Spicy Beef Strips
 Categories: Meat, Main dish, Low cal
      Yield: 1 servings
 
      2 oz Dry sherry
      4 ts Sesame oil
    1/2 ts Fresh lemon juice
     10 oz Lean beef top round cut
           - 1" thick
    1/2 c  Sliced scallions
      2 tb Low-sodium soy sauce
    1/2 ts Red wine vinegar
    1/8 ts Dried red pepper flakes
    1/2 c  Snow peas, cut into thin
           -strips
      1 c  Fresh mushrooms, quartered
    1/2 c  Coarsely chopped red bell
           -pepper
    1/2 c  Coarsely chopped radicchio
      4    Outer leaves radicchio
 
  Combine sherry, 1 tablespoon of the sesame oil, and the lemon juice
  in a small bowl.  Place meat on rack in broiler pan.  Brush both sides
  evenly with sherry marinade and let stand for 5 minutes.  Preheat
  broiler.  Broil meat 4" from heat, for 2 minutes.  Turn and broil for
  2 minutes longer or to desired doneness.  Remove and keep warm.
  
  Combine scallions, soy sauce, vinegar, and pepper flakes in a small
  bowl.  Heat the remaining 1 teaspoon of sesame oil in a medium skillet
  over medium heat; add snow peas, mushrooms, pell pepper, and the
  scallion mixture.  Stir fry for 3 minutes; add the chopped radicchio
  and cook for 1 to 2 minutes, until vegetables are tender crisp.
  
  Slice beef diagonally into strips.  To serve, toss beef with
  vegetables and place on whole radicchio leaves.
  
  Makes 4 servings.

      Title: Fiesta Chicken, Low Cal
 Categories: Low cal, Main dish, Poultry
      Yield: 6 servings
 
      8 oz Can Tomato Sauce
    1/2 c  Orange juice
    1/2 c  Finely chopped Onion
      2 tb Raisins
      2 tb Chopped Pimento
    1/2 ts Oregano, crushed
    1/2 ts Chili powder
           Clove Garlic, minced
     12 oz Chicken Breast Halves  *
      2 ts Cornstarch
      1 tb Water
    1/4 c  Snipped Parsley
      3 c  Hot cooked Rice
 
  Several dashes bottled Hot Pepper Sauce * 12 oz boned skinless chicken
  breast halves, cut into 1" pieces
  In a large skillet combine tomato sauce, orange juice, onion, raisins,
  pimiento, oregano, chili powder, garlic, and hot pepper sauce. Bring
  to boiling; reduce heat. Cover and simmer 5 minutes.
   Stir in chicken; return to boiling. Cover and simmer 12-15 minutes
  more or till chicken is tender and no longer pink.
   Meanwhile combine cornstarch and water. Stir into skillet. Cook and
  stir till thickened and bubbly. Cook and stir 2 minutes more.
   Toss parsley with rice. Serve chicken mixture over rice.
