A Mennonite is an Amish that drives a car and has a telephone as I understand
it. We do have an Amish community in Arthur, IL in the East-central part of the
state. I buy some of their produce and especially the "Amish Noodles" at
Humphrey's Market. A lot of people seem to think that the notation of "Amish"
on a product is a magick touchstone. I've bought some of the Amish-built
furniture and it was no better or worse than the stuff from Thomasville or
other of the North Carolina furniture builders.

recipes. <SHRUG> I don't see anything much wrong with it - or that unhealthy,
for that matter.

      Title: Cherry Balsamic Grilled Stuffed Chicken Breasts
 Categories: Poultry, Fruits, Cheese, Pork
      Yield: 4 servings

MMMMM-------------------CHERRY BALSAMIC SAUCE-----------------------
      1 c  Balsamic vinegar
      2 tb Olive oil
    1/2 c  Pitted, chopped sweet
           - cherries
      1 tb Dijon-style mustard
      1 tb Sugar
      2 ts Chopped fresh sage
      1 ts Chopped fresh rosemary
      1 ts Thyme
    1/2 ts Salt
    1/8 ts Ground pepper
    1/2 c  Pitted, halved, fresh sweet
           - cherries

MMMMM--------------------------CHICKEN------------------------------
           Salt and pepper
      4    Chicken breasts; skinned,
           - boned, pounded thin
      8 tb Fresh sweet cherries; pitted
           - chopped
      4 sl Emmenthaler cheese
      8 sl Prosciutto; rough chopped
           Fresh cherries; garnish

  MAKE THE SAUCE: Mix vinegar and olive oil; reduce mixture
  to 1/2 cup.

  Add chopped cherries, mustard, sugar, herbs, salt, and
  pepper; simmer 10 minutes. Reserve half of sauce for
  marinade.

  Add halved cherries to remaining sauce; return mixture to
  a boil and simmer about 1 minute.

  Serve with grilled chicken breasts.

  Makes 4 servings sauce (and about 1/3 cup marinade).

  Top each pounded out chicken breast with salt and pepper,
  one slice of cheese, 2 slices of prosciutto and 2
  tablespoons of the chopped cherries. 

  Roll up tightly and secure with a skewer. Brush with
  Cherry Balsamic Grilling Sauce and grill until cooked
  through. About 6-8 minutes per side. 

  Serve alongside a fresh green salad. Drizzle with any
  remaining Grilling sauce and garnish with fresh cherries.
