      Title: Frozen Caramel Coconut Pie
 Categories: Pies, Desserts, Nuts, I scream, Dairy
      Yield: 6 servings

      4 tb Butter
      2 c  Sweetened flaked coconut
      1 c  Chopped pecans
      8 oz Cream cheese; softened
     14 oz Sweetened condensed milk
     12 oz Frozen whipped topping;
           - thawed
      8 oz Caramel ice cream topping
      2    9" graham cracker crusts

  Melt the butter in a large non-stick skillet. Add the
  coconut and pecans, stirring constantly until the
  coconut is lightly browned. Pour the coconut and
  pecans out on a plate to cool completely.

  Use an electric mixer to combine the cream cheese and
  condensed milk, mixing until well blended. Fold in the
  whipped topping and one-half of the coconut mixture.
  Pour one-fourth of this mixture into the bottom of the
  two crusts. Spoon on as much caramel topping as you
  wish. Pour over the rest of the cream cheese mixture.
  Sprinkle with the remaining coconut and pecans. Freeze
  the pies at least 4 hours. Remove from the freezer
  about 20 minutes before serving time.

  Return any leftover pie to the freezer.

      Title: Strawberry Margarita Pie

      Yield: 6 servings

MMMMM--------------------PIE CRUST-------------------------
      1 c  Fine crushed pretzels
      3 tb Sugar
    1/3 c  Melted butter

MMMMM---------------------FILLING---------------------------
    1/2 oz (2 envelopes) unflavored
           - gelatin
    1/2 c  Water
      3 c  Ripe strawberries; + several
           - for top decoration
    1/2 c  Sugar
    1/4 c  Tequila
      1 tb Triple sec
      1 c  Good quality strawberry
           - yogurt
      6 oz Can frozen concentrate;
           - slightly thawed

MMMMM---------------------GARNISH--------------------------
           Crushed pretzel pieces
           Perfect strawberries
      1 c  Frozen whipped topping

  Make the crust: Preheat oven to 350øF/175øC. Combine
  all ingredients and mix well. Press on bottom and up
  sides of a 9-inch pie pan. Bake 9 or 10 minutes, or
  until lightly browned. Allow to cool completely.

  Sprinkle the gelatin over the water in a small
  saucepan. Allow to stand 5 minutes to soften, then
  cook over medium heat until gelatin is completely
  dissolved (about 2 minutes).

  Purée the strawberries in a blender or food processor.
  Add the cooled gelatin mixture, sugar, tequila, triple
  sec, yogurt and limeade and continue blending or
  processing until well mixed. Cover and refrigerate for
  at least 1 hour (spoonfuls of filling will mound).
  Spoon filling into a prepared crust, and freeze until
  firm, preferably overnight, but at least 6 hours.

  Garnish with whipped topping, sprinkles of crushed
  pretzels and several half or whole perfect
  strawberries.
