Though your theory of the gelled lubricant seems reasonable and
plausible it is not the only one nor the best explanation of stiction.
I read it explained that if the head surface became so polished that
it was perfectly flat with the platter, then when it was parked the
surfaces actually formed a molecular bond that was stronger than some
glues. You can observe a similar effect with two pieces of flat glass,
they are difficult to pull apart without working some air into their
middle. Freezing helps to reduce the attractive molecular forces
inbetween the surfaces.

In addition a hard disk head has some pressure bearing down on it and
it must take off from the platter in order to function properly. This
head down force further worsens the stiction problem by forcing the
molecular effect into more intimate contact and air has great
difficulty getting inbetween the surfaces. You will notice stiction
didn't happen with new drives. If the seeping lubricant was at fault
then new drives would have suffered from stiction too. Stiction only
came about after a number of head parking cycles had worn the surfaces
perfectly flat. The cure for stiction is to simply make the head
surface less than perfectly flat.
