This is exactly what I was talking about when I said that instructions
running counter to common sense should be ignored or changed. I run into
this problem constantly with recipes, and _invariably_ when I follow
the directions counter to my intuitions, the result is crap.

The difference in Gail's crockpot beef roast recipe and CATFM's
rib eye recipe is that the crockpot roast is using 5 oz of horseradish
for a 3 1/2 POUND cut of meat over a long, mellowing cook time.
CATFM calls for the same amount - as well as SIX OUNCES of blue cheese -
for a single undersized (heh) ribeye.

Agreed.  This is another example of CATFM's carelessness, or if
you're less charitable, stupidity - are they proofreading this
stuff before it gets posted?  Or do they actually think that a
6-ounce block of blue cheese isn't overkill?  Do they even know
how damn BIG a six-ounce block of blue is?? I love blue cheese
but that's just ridiculous.

I once watched Mario Bastardo (or whatever the hell his name is)
on  Iron Chef America shave about three ounces of black truffle on
a dish before serving it.  IIRC, the entire creation was an
excercise in numb-palate* excess rather than nuance or flavor.
That CATFM steak reminds me of a trailer park version of Mario's
vision.

* - Not "palate-numbing," which implies the chef had some taste
    to begin with.  Mario was piling on all sorts of shit on
    the plate simply because he could, not because having your
    taste buds beaten to death with a sledgehammer was the
    desired effect.
