Margaretville basically had the Memorial Day parade and about a month
later, the firemen had a parade for thier field days but it was just
various fire departments and the school band). I think that evolved into
a summer festival (week long thing) for a few years and the Town of
Middletown bicentennial. Those had more of a parade, then things settled
back to just the firemen's parade. Now the field days are basically just
several days around the 4th of July & I don't think they even have a
parade any more.

The Margaretville firemen, as well as a lot of others in the area, do
Brooks bbq chicken as a fundraiser during their field days. Brooks is
out of Oneonta; we're going to stop there on our way to Margaretville
from western NY and get some chicken. My folks used to cook it on the
grill quite often during the summer; now with the local bears, they
don't bbq.

Yes, that's also why the Beaverkill is so famous.

"BROOKS" BBQ MARINADE FOR CHICKEN

1 cup cider vinegar
1/2 cup salad oil
1 egg
5 teaspoons salt (we cut this back by about half)
1 1/2 teaspoons poultry seasoning

Mix all, (a blender works well) and pour over chicken.  Let marinade at
least 8 hours, 24 is good, turning chicken occaisionally.  Grill until
done, basting if desired as it is turned or just before finishing.

Steve's mom gave us a varient from the 4-H--add about a teaspoon of
pepper (We think white pepper would work well.) to the above.
