I'm now milder in my opinions than in my youth. I guess
that now that I fly more frequently, it's not possible
for me to wish a plane crash on anyone. I can hope that
the Rangers' and the Cards' team buses collide at high
speed, though, can't I?

And then there's the issue of the mini-curse, what

Rumors are John Henry is going to do something about
the most recent Epstein acquisitions. He's got to be
hurting paying $20 million a year for a nonperformer,
for example.

There's some good news in this world, I suppose.

Chef Wan's Rendang Pedas Daging

4 Tb cooking oil
2 onions, peeled and finely pounded
500 g beef sirloin, cut into bite-size cubes
2 Tb tamarind juice
salt to taste
sugar to taste
2 turmeric leaves, washed and sliced
h - For the spice paste, you'll need
8 shallots, peeled
5 cloves garlic, peeled
2.5 cm young ginger, peeled
1 cm galangal, peeled
10 dried chillies, rinsed, soaked in water to soften,
- then drained
3 stalks lemongrass, sliced
1 cm piece belacan or dried prawn paste
- dry-roasted on a grill, in the oven or in the microwave

Cooking Rendang is an intense business but Chef Wan's version
can be executed in 3 easy steps! Combine all the spice paste
ingredients in a blender and blitz it until smooth.

Heat the oil in a wok or large pan. Fry the onions and
spice paste over low heat for about 10 min, stirring
constantly. Then add in your beef, the tamarind juice,
sugar, and salt to taste, followed by the turmeric
leaves. Continue to stir constantly until the beef is
cooked and the gravy has thickened.

It's as simple as that! Now remove from the heat, dish
out and serve with rice or better yet ketupat or lemang.
You're all ready for Hari Raya!
