Hi Dave,

DD> and, of course three separate electro-steamers.

RH> Closest thing I have to that is my rice cooker/steamer. It has a
RH> plastic "basket" insert for steaming.

DD> My first rice cooker had that - Put a cup or so of rice in it - water
DD> to cover and put the lid on the whole thing - and let it steam. When
DD> sufficient time has passed, unplug/turn off and lift the basket out.

My first rice cooker had that feature as well. That one was a pass along
from Deborah.

DD> Fluff the rice and it's all good. That one went to a new home when I
DD> got the bigger one I currently use most of the time. It claims that

I upgraded to a larger one, without the steamer insert, while we were in
HI and eating a lot more rice. Small one went to a college student. Both
of those were the simple weight based--hit the lever type cookers.
About 3 years ago ago I got a new technology rice cooker/steamer from
Aldi's. It uses more of a temperature based cooking method with various
settings for white or brown rice, steaming or whatever. Rice takes twice
as long to cook but is quite tender. We've used the steamer feature a
couple of times; it does a decent job on vegetables.

We bought a small electric pressure cooker from Aldi's a few months ago.
It has a rice cooker feature--does brown rice in about half an hour,
start to finish. Can't steam in it but I can use it for a slow cooker as
well as a pressure cooker (but not canner). It works quite well for all
functions.

DD> one can do pasta in it - and I don't see why not ..... although I
 DD> haven't tested that assertion - yet.

I think I'd be a bit hesitant about doing pasta as it requires so much
water in proportion to the pasta.

RH> concept in action at a home show. We've had more, and less stowage
RH> space but this is ours to play with, modify, improve, change, etc.

DD> With my arthritis and increasingly decrepit knees I often have trouble
DD> getting back up off the floor. So, I have invested in one of those
 DD> "mechanic's seat" roll-around deals (http://tinyurl.com/ROLL-AROUND)
DD> that makes it much easier to get back up. The one in the link is no
DD> longer available at my place - but Amazon has very similar ones from
DD> about $14. They are hand for many thing that require working low.

Now that's a great idea! I have trouble getting up off the floor thanks
to two weak wrists and an elbow that doesn't always play nice. I think
it might be something to look into, for a variety of uses around the
house.

DD> I had a narrow, tall double sided shelving unit at the tin-can that I
DD> had my friend Les make for me out of scrap pallets. It fit in a "dead
DD> storage closet" that was not useful at all unless one wanted to set it
DD> and forget it ..... until we removed to shelves and put this roller
DD> equipped unit in there. I could pull it out all the way and swivel to
DD> get to the backside. No place to put it in the new house - so it went
DD> to a co-worker who lives in a tin can similar to the one I abandoned.
 DD> He really likes it.

Sounds like it was a good idea. My grandmother's kitchen had just a
couple of cabinets (for dishes) so she had a wooden pantry custom built
with shelving of all sizes and shapes, a swing aside to get to the back
shelves section, etc. It was really neat; I've no idea what happened to
it when my aunt sold the house. Closest thing I've seen since is at a
friend's house in PA--she had one built into an under the stairs closet.
I asked, and she said an Amish carpenter did it as a custom job for her.

DD> is also a narrow (8" or so) undercounter cabinet that has a shelf
DD> half-way between floor level and counter. Once I remove that shelf the
DD> space will become useful for storing cutting boards and sheet pans.

RH> We divided a cabinet for flat pan storage. My parents, in the same
RH> kitchen remodel, put in the narrow cabinet for cookie sheets, etc. I
RH> think it has a shelf also--one of these "what were they thinking of?"
 RH> additions, IMO.

DD> I couldn't see any way to get my 16" X 24" sheet pans in there with
DD> the shelf in place. So, out it came.

Steve took out the half shelf, put in the divider board (giving me about
8 or 9 inches of full, vertical space, and then cut down & re-installed
the half shelf. Gives me the vertical space for cookie sheets, cooling
racks, etc and a slightly smaller, but still useable cabinet.

DD> I'm just curious to know the thought process that led someone to put
DD> that silly shelf in there. I've no idea (and I have an agile
DD> imagination) what it could have possibly been used for.

RH> Your guess is as good as mine. (G)

 DD>    8<----- SNIPPETY ----->B

RH> OK, hardest part will be the dried celery leaves as we don't go thru
 RH> that much celery.

DD> My current supply of celery leaf came from the Odd Lots store. I've
DD> also bought it from the spice aisle at regular grocery stores, etc.
DD> I'll bet your Whole Foods or Penzey's has it was well. One could, I'd

OK, I just grabbed a Penzey's catalog. They offer celery flakes, salt
and seed. They say that 1 TBSP of flakes equals one small fresh stalk of
celery--think it'll work? We were in Whole Foods the other day; I should
have looked. Also, The Fresh Market chain has a good herb/spice section;
I'll check it out next time we go. Nearest ones are in Raleigh so it may
take a while tho.

DD> imagine, whiz celery seeds in an R2D2 grinder (sort of like doing
DD> cumin) but then you'd have to approach with caution on quantity to get
DD> the same flavour without blowing someone's head off with an overload.

A little bit can go a long way there; I'd cut the amount in the rub to
maybe a third or so of the dried.

Catch you later,
Ruth
